Grain-Free Coconut Flour Pumpkin Muffins

Mmmmm. Pumpkin anything reminds me that it’s Autumn. A few weeks ago at my moms group that I attend we made Pumpkin Spiced Latte’s. They were super delicious and not as sweet at the latte’s you would buy at a coffee house. The flavor of the pumpkin reminded me that it’s the season for warm weather drinks, all things pumpkin, and time to bundle up in hats and scarves.

This morning, my hope was to make these Grain-Free Coconut Flour Pumpkin Muffins before my daughter went to school. Sadly, she will have to wait to have it as an after school snack since I didn’t wake up early enough to get them baked. The recipe calls for chopped up pecans or walnuts to top the muffins with, but when I opened my pantry to get them, I realized we were out. So my muffins look a little naked, but still very tasty.

IMG_6858.JPGThey are very moist, and  hold together quite nicely for a gluten free muffin. I can’t taste the pumpkin as much as I would like to, but the essence of the pumpkin in definitely there.
