Yesterday I made Tuscan Chick Pea Tomato Soup for dinner. I forgot to take a picture to share, but it did turn out quite tasty. It was nice to have a soup with a creamy texture without having the dairy. My husband and kids added a little parmesan cheese to the top of their soup and they enjoyed it. It’s a quick and simple recipe, which for this season of life is much needed.
